(WTNH) -- Stephen Fries is back in the kitchen, making chilled blueberry soup.
Chilled Blueberry Soup
2 cups fresh blueberries
3 cups orange juice
1/8 cup light brown sugar
1/8 teaspoon cinnamon
1 tablespoon cornstarch
1 tablespoon water
½ teaspoon orange zest
Optional: `Crème fraiche or yogurt to garnish
Place blueberries, orange juice, sugar and cinnamon in a pan and bring to a boil.
Combine cornstarch and water in a bowl, Slowly mix into blueberry mixture. Over low heat and stirring frequently, cook until it thickens slightly. Remove from heat and stir in orange peel. Cool.
Once cooled, puree in blender. Pour into 4 soup bowls and place in refrigerator. Garnish with crème fraiche or yogurt, if desired.
