(WTNH) - Mother-daughter duo Betty Ann and Stephanie are back in the kitchen.
Chocolate Cream Cheese Cake
6 ounces cream cheese, softened
1/2 cup butter, softened
1 teaspoon vanilla
6 cups confectioner's sugar
1/3 cup milk
4 ounces unsweetened baking chocolate, or bittersweet, melted and cooled
1/4 cup soft butter
3 extra large eggs
2 1/4 cups bleached flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/4 cups milk
Stir together flour, baking powder, baking soda, and salt. Grease and flour 2 (9-in) cake pans; set aside. In bowl of Kitchen Aid, beat together cream cheese, 1/2 cup butter, and vanilla. Add the sugar alternately with the 1/3 cup of milk and beat until smooth. Add the melted and cooled chocolate and beat again. Remove two cups of this for the frosting and set aside.
To the remaining mixture in the bowl, add the 1/4 cup of soft butter, and then beat in the eggs. Add the dry ingredients alternately with the 1 1/4 cups milk and mix just until th mixture if smooth. Pout batter into te prepared pans and back at 350F for 25-30 minutes or until tester in center comes out clean. Cool 5 minutes in pan, then turn out no wire racks to cool completely. Frost with already made frosting. Chill until needed, Cake keeps very well.
