(WTNH) - New Haven Public Schools are providing free meals to the most needy kids in the city with the New Haven Food Truck. The Food Truck offers healthy fare like the Roasted Sweet Potato & Black Bean Salad.
1 Sweet Potato, medium diced
2 cups Black Beans, boiled & drained
3 leaves, Swiss Chard, chopped & quick sauté.
1 Tomato, diced
3 Scallions, sliced thin
3 Limes, juiced
¼ cup Olive Oil
1 Garlic clove
Kosher salt & pepper, taste
1. Cut sweet potato into 1" chunks, toss with olive oil, salt & pepper and roast until tender. Cool.
2. Boil and drain black beans. Cool.
3. Add olive oil to hot sauté pan, add Swiss chard and drizzle of water, sauté quick until tender. Cool.
4. Mix all remaining ingredients in a stainless steel mixing bowl. Toss well.
5. Chill in refrigerator until serving time.
