A Summer fish dish

(WTNH) - Neil Fuentes and Billy DiCrosta are back in the kitchen.

A Spring fish dish

2 pieces of fish (fish of your choice, a white flaky fish will work best)
2 garlic cloves, minced
1 small onion diced
1 small tomato diced
The juice of one lemon
1/4 cup of wine
2 tsp of capers
2 black olives Sliced
olive oil to taste
salt and pepper to taste
1/2 teaspoon of Sazon
Foil

Place the fish on top of a 12 x 12 sheet of foil and top with the olive oil salt, pepper and sazon first. Then add the rest of the ingredients. Grab the two sides of the foil and bring them together, fold the over 1 inch, grab the two end sides and fold them inward so the nothing leaks out, you will be creating a foil bag. Place in a 450 degree oven for 10 to 15 minutes or until the fish is cooked through. I forgot a dash of white wine on each fish!

Serve inside the foil. Enjoy!
