Author Lisa Samia prepares Fattoush

(WTNH) - Author Lisa Samia shares a recipe and tips on turning 50.

Fattoush is a Middle Eastern cold bread salad that I grew up with that is filling, delicious and nutritious see more healthy recipes in her book, "Don't be Afraid of Fifty. "

Ingredients
2 pocket or pita bread
2 large tomatoes
2 large cucumbers
One-half onion
1 bunch parsley
1 bunch mint
1 can chick peas
Lemon
Olive Oil
Summac (spice)

Preparation

  1. First, slice open the pita's so that they are open faced.  Place the pita's on a cookie sheet.  Drizzle olive oil on each piece, sprinkle sea salt and garlic powder.  Bake at 350 for 10 -15 minutes until golden brown.  Cool.
  2. In large bowl dice tomatoes into bite size pieces. Core the cucumbers of the seeds and slice about one-quarter inch in half moon shapes and add to tomatoes. Add the diced onion.  Rough chop one large fresh parsley and one fresh mint. Add. Drain one can of chick peas and mix.
  3. Mix the olive oil and lemon for the dressing and add approximately 3 tablespoons of sumac.  Right before serving take the cooled pitas and crush into bite size pieces and add to salad.  Mix and serve immediately.
  4. Add some feta as an option.
