(WTNH) - Cristina Chang Bryant makes easy shrimp cakes appetizers for any party.
Easy Shrimp Cakes
1 lb. peeled, deveined shrimp
1 tbs. lime juice
1/2 small diced red onion
1 egg
1 tablespoon Dijon mustard
Dash of Tabasco
1/2 teaspoon salt
1 tablespoon shopped chives
1 cup panko
1 cup panko for dredging
1/4 cup safflower, peanut, or grapeseed oil for frying
In a food processor, chop shrimp about 3 pulses. Add all ingredients except for panko. Turn on for about 4 more pulses until blended. Transfer to bowl and fold one cup of panko into the shrimp mixture with spatula. With a 3 oz cookie scoop form 12 cakes. Dredge each shrimp cake in the 1 cup of panko. In a large skillet over med high heat the oil. Fry cakes until golden brown and cooked thoroughly about 3 minutes on each side.
Serve the shrimp cakes warm with chili sauce, cocktail sauce of chili mayonnaise.
