Gazpacho & Guacamole

(WTNH) - Author Dian Griesel gets Turbocharged in the kitchen.

Gazpacho
Serves 4

Ingredients:
1 cup chopped tomato
1/2 cup chopped green bell pepper
1/2 cup chopped onion
1/2 cup chopped celery
1 Tbsp fresh cilantro
2 tsps fresh lemon juice
1/2 tsp celery seeds
Black pepper to taste
2 Tbsps sour cream

Directions:
1. In food processor, combine tomato, green bell pepper onion, celery, 1 Tbsp fresh cilantro and 2 tsps fresh lemon juice, puree

2. Stir in 1/2 tsp celery seeds and freshly ground black pepper, to taste; refrigerate covered, until chilled
3. Serve topped with sour cream

Guacamole
Serves 6

Ingredients:
2 rips avocados
1/2 cup restaurant-style chunky salsa (sugar free)
1/4 tsp hot pepper sauce (optional)
1/2 seedless cucumber, sliced into 1/8 inch rounds

Directions:
1. Cut avocados in half; remove and discard pits
2. Scoop esh into medium bowl
3. Mask with fork
4. Add salsa and hot pepper sauce, if desired; mix well
5. Transfer guacamole to serving bowl; surround with cucumber "chips"
