Captain Ward Hope and Firefighter, Mark Monroe, of the Norwalk Fire Department, were in the kitchen to wrap-up our final Firehouse Friday, showing Teresa how to make Mediterranean Baked Fish.

These gentlemen are but 2 of the 130 members of the Norwalk Fire Department and they are proudly participating in the CT Burn Center fundraising efforts that have been taking place all year. 

Mediterranean Baked Fish in Parchment

2 - large pieces of parchment paper

Extra virgin olive oil

2 - 6 oz to 8 oz pieces of a white fish

20 - pieces of asparagus

2 - teaspoons butter

2 - cloves garlic

1 - lemon

Fresh dill

White wine

Kosher salt & fresh ground pepper to taste.

Mix olive oil, butter, garlic, lemon, dill and white wine. Marinate fish for at least one hour.

Place fish on pieces of parchment along with 5-6 asparagus spears. Fold parchment over top and on ends.

Bake at 375 degrees for 40 minutes
