Firehouse Meatloaf:
1 ½ lbs ground beef (85/15)
¾ sleeve of Ritz crackers (crush into crumbs)
1½ cup ketchup (divided)
1 can crushed pineapple
½ cup water
2 eggs
Dash of black pepper
Dash of salt
½ cup minced raw onion
Teaspoon of Worcestershire sauce
Mix together in large bowl. Place on sheet pan and form into a loaf shape. Bake for approx. 40 minutes at 375 degrees. 10 minutes prior to end of baking time, mix 1 cup of ketchup with 1 can of crushed pineapple. Warm in a pan on stove over medium heat, whisk together until sauce thickens. Spread ketchup/pineapple sauce on top of meatloaf; increase heat to 425 degrees, bake an additional 20-25 minutes
