Vivo Executive Chef, Shane Arnold ( www.vivohartford.com ), was in the kitchen with Teresa showing us their decadent recipe for Lobster Macaroni & Cheese.
LOBSTER MAC-N-CHEESE WITH CAVATELLI
Ingredients:
2 tsp. Olive Oil
1 tsp. Minced Shallot
1 tsp. Minced Garlic
8-10 Small Shrimp (71-90 CT)
1 OZ Sherry Wine
6 oz Lobster Sauce
1 oz Cheddar, Shredded
1 oz Gruyere, Shredded
1 oz Parmesan, Grated
6 oz Lobster Meat, Cooked; Cut into large pieces (Reserve Claw meat for extra presentation)
3oz Cavatelli Pasta
2 tsp Chopped Parsley
Salt and Pepper (as needed)
1 Tbsp. Parmesan Seasoned Panko Bread Crumbs
Directions:
Over medium-high heat, briefly sauté shallots and garlic in olive oil. Add shrimp and sauté lightly. Pull pan away from heat and add sherry wine to the pan. Return pan to heat. Add lobster sauce, all three cheeses and stir into sauce. Add in the lobster meat including the claw. Incorporate the pasta into the pan and toss to coat all ingredients. Cook for an additional minute to heal all items through completely. Season the dish with parsley, salt and pepper. Remove claw from pan and pour the macaroni and cheese into a serving dish. Lay lobster claw on top and spread bread crumb mixture across as a topping.
