John Lyman, Executive Vice President, and Matt MacDowell, Retail Bakery Manaer, of Lyman Orchards ( www.lymanorchards.com ), were in the kitchen to tell us about one of Connecticut’s most visited attractions and one of the country’s oldest family farms in continuous operation. 

Every year, for over 40 years, Lyman Orchards celebrates the Wonder of Winter with a weekend of family fun at its annual WinterFest, and this year’s is being held on February 23 rd and 24 th.  This family-friendly event boasts free admission, a snowboard and tubing park, Husky dog sled rides, ice carving demonstrations, food sampling, horse-drawn carriage rides and more!

In addition to all the fun, Lyman Orchards ( www.lymanorchards.com ) also lays claim to some of the best pies you can get in the state of Connecticut so Matt decided to demonstrate how to make their Maple Cheesecake for us too.

 

Lyman’s Maple Cheesecake

Crust :

1 cup Graham cracker crumbs

½ cup Sugar

8 Tbsp Butter 

Directions:

Combine graham cracker crumb and sugar together in bowl. Melt butter, then add to graham cracker mixture and mix until it “holds” together. Press mixture into bottom of cake pan. 

Filling:

16 oz. Cream Cheese

1 ¼ cups Sugar

3 Tbsp Butter

1 Tsp Vanilla

5 Eggs

½ cup Sour Cream

1 cup Maple Syrup

Directions:

In a mixing bowl with paddle attachment, add cream cheese, sugar, butter and vanilla.  Mix on low speed until combined and then cream together for 2 minutes on the third speed (medium-high), remember to scrape the sides of the bowl.  Add eggs slowly, on low speed, once they are incorporated, mix for 2 minutes on medium-high.  Add sour cream and maple syrup and mix on low speed until incorporated fully.  Pour filling into prepared crust and put into a water bath.  Bake at 350 degrees for 30 minutes.  When done, the cheesecake should wobble, not jiggle.  Chill for 8 hours.

Maple Glaze:

2 Cups Confectionary Sugar

¼ Cup Whole Milk

¼ Tsp Maple Syrup

Directions:

Mix ingredients in a small bowl with a whisk until well blended.  Drizzle over finished cheesecake.
