Lori Greene, owner of Elizabeth Richard Gifts in Waterbury, was in the kitchen demonstrating her recipe for Perfect Pumpkin Bread, which is her traditional “Thank You” gift to friends and clients at Thanksgiving time.
Perfect Pumpkin Bread
2 cups flour
1/2 tsp salt
1/2 tsp baking powder
1 tsp baking soda
1 tsp ground cloves
1 tsp cinnamon
1 tsp nutmeg
2 cups sugar
1 1/2 sticks of softened butter
2 eggs
1 (1 lb) can of pumpkin
Splash of high quality vanilla
Pre-heat oven to 350 degrees. Grease three foil loaf pans
Mix all dry ingredients together with a fork, set off to the side.
Beat sugar with butter until blended. Add eggs, one at a time. Beat until light and fluffy. Add pumpkin. Add flour mixture and beat until well combined.
Pour batter into pans, place on cookie sheet and bake for 50 to 55 minutes. Cool and serve.
