Dr. Ellen Bass along with her niece, Sophia Khan, co-wrote the book: 'Students Go Gourmet' ( www.studentsgogourmet.com ) based on Sophia’s idea for creating healthy, delicious recipes that are easy and economic enough to be made right in a student’s dorm room.
Through the use of some non-traditional ingredients and easy-to-prepare methods, they have come up with a delicious way to snack healthy with crowd-pleasing fare, while watching the Super Bowl.
New Orleans Spicy White Bean and Garlic Dip
6-8 servings
Ingredients :
15 oz. Can Cannellini Beans
5 Tbsp Olive Oil
1 Tbsp Garlic Paste
¼ Tsp Salt
¼ Tsp Cayenne Pepper (use ½ Tsp if you want it spicy)
Directions :
Blend all ingredients in a food processor until smooth. Serve with tortilla chips or pita bread.
