Chef Debra Queen was in the kitchen teaching us how to make apple pie to-go!
Apple Pie-lets
Ingredients:
½ Cup Organic Apple Cider
2 tbsp. Organic Cane sugar
2 tsp. Cornstarch
1 tsp. Cinnamon, plus additional for sprinkling
½ tsp. Real Vanilla Extract
1/8 tsp. Sea Salt
3 cups peeled and chopped apples (preferably Fuji or Gala)
6 large square egg roll wrappers (located in produce section near Tofu)

Optional - Whipped Cream, Dairy Free Whipped Topping, Ice Cream, Coconut Dream, Sharp Cheddar or Melted Caramel…Streusel Topping (recipe follows)!
Directions:
Preheat oven to 350 degrees. In a medium nonstick pot on the stove, combine sugar, cornstarch, cinnamon, vanilla & salt with ½ cup cold water. Mix until ingredients dissolve. Add apples, stir. Bring to light bubbly boil and simmer until apples are softened 7-8 minutes or so, stirring frequently. Reduce heat to low; stir, stir, stir for 1 - 2 minutes; set filling aside to cool.
Prepare a baking sheet with foil, sprayed with coconut spray and set aside.
Place two egg roll wrappers on a dry surface. Set out a small dish of water for dipping fingers. Start with water run along all of the wrapper edges. (Repeat as needed while preparing apple pockets, as this acts as your glue to seal them.) Starting 1/2 inch from the bottom, place 3-4 tablespoons of apple filling along the bottom half of each wrapper leaving ½ “ border around the sides. Fold top half of wrapper over filling, so top edge meets the bottom and filling is encased on all three sides. Dab sides with water; fold each inward 1/4 inch then press firmly along with prongs of a fork to seal tightly. Carefully transfer to the baking sheet with large flat edge spatula. Repeat this process with remaining wrappers and filling, for a total of six pie-lets.
Spray each pocket lightly with coconut spray. Bake until edges begin to brown, 15 – 18 minutes then cool for 5 minutes.
Top with additional cinnamon sugar and whipped cream. Enjoy!
Streusel Topping~
¾ Cup Organic AP Flour
¾ Cup Organic Cane Sugar
1 tsp Ground Cinnamon
1/8th tsp fresh ground Nutmeg
½ Cup Softened Organic Unsalted Butter
Either Pulse in Food Processor 6 or 7 bursts or blend with fingers to resemble coarse meal. Use to top coffee cakes, muffins, pies and pie-lets!
