Basic Crepe Recipe
1 Cup all-purpose flour
½ Cup milk
½ Cup water
2 Eggs
2 Tbsp melted butter
¼ Tsp salt
In a large mixing bowl combine the flour and salt. In a smaller bowl, mix together the eggs, milk, water and butter. Slowly add the liquid mixture to the dry mixture and whisk until a thin, smooth batter forms.
Place a medium sized non-stick frying pan over medium-low heat and add about ¼ cup of the batter per crepe. Swirl the pan around to distribute the batter evenly over the entire bottom of the pan. Once the crepe’s borders start to peel back from the frying pan (about 2-3 minutes), carefully turn them over with a spatula. Cook for another minute.
Place cooked crepes on a plate and keep covered with a cloth or aluminum foil until you are ready to serve. Stuff them as you would a taco with your favorite sweet or savory ingredients.
