Ingredients:
Italian Sausage (cut into 6 inch links)
One bunch of Broccoli Rabe
One loaf fresh Italian Bread ( cut into 3or4 pieces for sandwiches)
3 tablespoons olive oil
black pepper
red pepper flakes
2 whole garlic cloves, diced or sliced
¾ cup chicken stock (for flavor)
¼ cup pecorino romano grated cheese for garnish
To prepare sausage:
Slice each link lengthwise, but do not cut all the way through. Place on grill, or if using stovetop, place in frying pan. You can also cook in oven
cook thoroughly on both sides until golden brown. If using thermometer, must be 165 degrees for pork.
To prepare broccoli rabe:
Cut off 5-6 inches of stems prior to cooking. Heat olive oil in large frying pan. When oil is hot, add chopped or diced garlic, sauté until brown. Remove pan from heat, add broccoli rabe, and then return pan to heat. Cover for 20 seconds, this creates steam. Using tongs, turn the rabe to coat in oil. Add pinch of black and red pepper. Add chicken stock. Cover, turn rabe with tongs every few seconds. When stems are tender , the rabe is done. Remove from heat. Add pecorino romano cheese to garnish.
