Baked Salmon with Mango Kiwi Salsa

My City Kitchen, Inc. (MCK) is a 501(c) (3) tax deductible Public Charity Organization. The mission at MCK is to instill healthy eating habits, build self-esteem, foster a sense of belonging, establish basic life skills in children so that they may grow into healthy adults. To teach kids about food, and food products. They hope to encourage kids to take a keen interest in what they eat, where the food comes from, and especially how to prepare it.

Mango Kiwi Salsa
Note: This Recipe was taken from Mississippi State University /UCONN Department of Extension
Ingredients:
• 1 kiwifruit, peeled and diced
• 1/4 cup mango*, diced
• 1 tablespoon cilantro, chopped
• 2 teaspoons lime juice
• 1/2 teaspoon chilies, minced
• pinch of salt

Directions:
1. Place all ingredients in a bowl and mix gently.
2. Serve with salmon or chips.
3. *As an alternative, substitute 1/4 cup dried figs for the mango.

Baked Salmon
Ingredients:
• 4 pieces of fresh salmon (4oz each)
• 2/3 cup or orange juice
• 2 tablespoon mixed fresh herbs chopped (Dill, sage, thyme, and rosemary)
• 1 teaspoon fresh grated ginger
• ½ teaspoon orange zest
• Dash of paprika
• salt and pepper

Directions:
1. Pre heat oven to 375
2. Place all ingredients except the salmon and mix gently in a bowl.
3. Spray baking dish with cooking spray
4. Place the salmon in the dish
5. Pour mix on the salmon and bake for 10-12mins
6. Place salsa in the middle of the plate and place the salmon on top the salsa
7. Garnish with micro greens
