(WTNH) - Banana walnut stuffed French toast
8 tablespoon butter
3 bananas, chopped
1/2 cup walnuts, chopped
2 tablespoons brown sugar
1 teaspoon cinnamon
1/2 cup brandy
6 large eggs
1 teaspoon vanilla
1 cup sugar
12 slices Texas toast or thick sandwich bread
Maple syrup
Instructions:
Melt 1 tablespoon butter in small saucepan. Cook bananas and walnuts until the bananas are very soft, 3-4 minutes. Add brown sugar, cinnamon and brandy cook for 5 more minutes. Set aside to cool.
With a whisk, whip eggs, vanilla and sugar in large bowl. Spread 1/4 inch of banana mixture on 6 slices of bread, top with remaining bread. Soak sandwiches in egg mixture for about 5 minutes, turning halfway through. Melt remaining butter in 2 large sauce pans. Sauté sandwiches until golden brown on both sides. Serve with maple syrup. Serves 4-6.
