Beans & Greens Hummus

New Haven Public School cafeterias are serving an assortment of locally grown produce this month grown on farms within 250 miles of New Haven's schools.

Over 100 area farms provides fresh produce to schools throughout the year. Last year, the district purchased 140,000 pounds of produce from our local farmers.

Timothy Cipriano will be making Beans & Greens Hummus.

Beans & Greens Hummus
White Beans- 1 cup
Garlic Cloves, Chopped- 2 tbs
Greens, steamed lightly, drained & chopped- ¼ cup
Olive Oil -¼ cup
Lemon Juice- ½ Lemon
Lemon Zest- ½ Lemon
Kosher salt & pepper Taste

Blend half the beans, garlic, greens, oil, lemon zest, salt & pepper in food processor and pulse till chunkily blended.
Add lemon juice and remainder of beans.
Pulse quickly to mix but not so much that you lose the texture of the freshly added beans.
Serve with chips and enjoy!
