Black Bean Babies with Cilantro Crema

Chef Debra Queen cooks up Black Bean Babies with Cilantro Crema.

1# Black Beans, soaked overnight, drained and cooked till softened with 1 pablano pepper, 1 serano pepper, 1 jalapeno, 5 cloves garlic, 1 bunch scallions (white part only) sliced thinly, 1 tsp kosher salt and 1 shallot chopped fine…cook all together in crock pot.  Drain and reserve part of the juice for later if needed.  Yields 18. 

Use approx. 32 oz cooked black beans rinsed and drained well.  Set aside 1 cup unprocessed beans to add after processing;  in large bowl or food processor bowl put beans and process or mash until almost smooth.   Add 2 tsp. Hot Sauce (if brave), juice and zest of 1 lime, 2 tsp. Cumin, ¼ Cup Cilantro chopped fine, 1 Lg. Egg (or egg replacer), 2 Tbls. Yellow Corn Meal with ½ tsp. Salt, 1 Tbls.  Adobo seasoning , the green part of the scallion, sliced thinly…  Chill for 1 hour then scoop or spoon by TBLS. Onto parchment paper…Toss in Corn Meal Mixture (adjust as needed)

In casserole dish, place 1 cup Corn Meal with 1 Tbls. Adobo Seasoning, 1 tsp. Gran. Garlic and 1 Tbls. Chili Powder then toss to coat Bean Babies. 

Chill or Freeze; when ready to cook, get Cast Iron Fry Pan Hot with scant amount of Organic Canola or Grapeseed Oil and Brown up the Babies until Golden and Crunchy.   
 
Top with Cilantro Lime Crema: 
4 Oz. Sour Cream or Tofutti Cream,  1 tsp. Adobo, Juice of 1 Lime and 2 Tbls. Cilantro, Salt & Pepper to taste.  Mix all together and chill well.  Garnish with tiny sliver of red onion or red pepper if desired.
