Chicken Seek Kabab
Ingredients:
1 lb boneless chicken breast cut in cubes
1 cup thinly sliced onions
1 tsp ginger paste
1 tsp garlic paste
1 tsp cayenne pepper
1 table spoon white vinegar
1 1/2 tsp salt
1 tsp cumin powder
1 tsp dry coriander powder
1 tsp turmeric
1/2 tsp nutmeg powder
1 egg
2 table spoons vegetable oil
Metal Skewers
Method: In a glass bowl add everything except egg and marinate it for 2 hours . In a food processor grind it well. Add the egg and mix it well. With a little oil in your palm shape the chicken mixture like a sausage around the skewers and cook it over the grill. Brush the kababs with a little oil and cook it for another minute. Gently slide it off the skewers and serve it with cilantro and mint chutney.
Mint chutney
Ingredients:
2 cups chopped fresh cilantro
1 /2 cup chopped fresh mint leaves
1 medium sized tomato chopped
2 green peppers chopped
1 inch piece of ginger
salt to taste
1/2 tsp ground black pepper
1/2 cup water
Method: Put all the ingredients in a blender and puree it. Lime juice can be added if needed for tartness.
Tofu Tikka Masala
Ingredients:
1 packet extra firm Tofu cut into 1 inch cubes
1 tsp lime juice
1 tsp cayenne pepper
1 tsp salt
1 tsp black pepper
1 bunch spring onions
1 cup red bell peppers cut in square
1 cup green bell peppers cut in squares
Method: Add all the ingredients except onions and peppers and leave it for few hrs. Take a few bamboo skewers and arrange the marinated tofu, onions and peppers. Brush it lightly with oil and cook it over the grill for a minute on each side. Brush it with Beetroot Date chutney and enjoy.
Beetroot date Chutney
Ingredients:
1 cup fresh beetroot
1 cup pitted dates chopped.
1/2 cup brown sugar
2 cups pomegranate juice
1 tsp salt
1 tsp powdered black pepper
1 tsp dry mango powder
Method: In a skillet bring everything to a boil. In a blender puree it in a sauce like consistency. Salt and sugar can be adjusted as per taste.
