(WTNH) - Quinoa Soup with Spinach
Ingredients:
2 tbsp olive oil
1 c. chopped onion
3 garlic cloves, minced
1 c. quinoa, rinsed
1/2 tsp. thyme
1 bay leaf
1 c. butternut squash, cubed
1 c. frozen corn, thawed
6 oz. baby spinach, shredded
6 c. chicken broth, more if needed
1/4 tsp. cayenne (optional)
salt and pepper to taste
Heat oil over medium high heat in soup pan. Add onion, garlic and squash. Saute for a few minutes. Add chicken broth and bring to a boil. Add quinoa, thyme, bay leaf and return to boil. Then reduce heat and simmer covered for 15 minutes. Add corn and remaining broth and cook additional five minutes. Remove bay leaf, add spinach and cayenne and cook 5 more minutes. Salt and pepper to taste.
