Gorgonzola-stuffed artichokes

(WTNH) - Gorgonzola-stuffed artichokes

Ingredients:
4 large artichokes
1 tbsp salt
2 lemons
5 oz gorgonzola cheese
1/4 c. cream
1 large garlic clove, minced
2 tsp fresh thyme, chopped
2 tbsp fresh parsley, chopped
1 c. panko
olive oil, for drizzling

Add salt to a large pot of boiling water. Cut stems off artichokes and remove prickers. Put artichokes in boiling water. Cut the lemons in half and squeeze juice into water. Cover and simmer for 30 minutes.

In a large bowl mix gorgonzola, cream, garlic, thyme and parsley. Mix in panko, Drizzle olive oil to moisten well.

Drain and cool artichokes and scoop out the choke. Scoop in gorgonzola mixture. Bake covered at 400F for 10 minutes. Uncover and bake 10 more minutes.
