Halibut with nicoise sauce

Published : Tuesday, 22 Mar 2011, 11:14 AM EDT

(WTNH) - Chef Sherry Swanson prepares grilled halibut with nicoise sauce.

Sherry Swanson is a culinary instructor, personal chef and owner of A Culinary Experience. She is classically trained in French and Italian cooking techniques. After graduating from culinary school Sherry honed her culinary skills in Europe by studying traditional French techniques in Provence with Chef René Bérard. Visits to local markets, wineries and artisan cheese makers expanded her knowledge of the culinary riches of Provence. From there, Sherry studied at the Italian Culinary Institute for Foreigners in Asti, Italy. There she experienced the Italian passion for food and wine first hand, visiting vineyards to learn about wine making, hunting for truffles, and making gnoocci, agnolotti and tortellini by hand. Sherry specializes in farm-to-table menus using the freshest, local, seasonal ingredients. She combines her passion for food and teaching to create engaging culinary classes, teambuilding dinners and culinary events. She teaches cooking classes at Williams Sonoma, The Kitchen at Whittemore Crossing, Jones Family Farm and other locations throughout Connecticut, as well as, private in-home classes.
