(WTNH) - Healthy Cheesecake Parfait
Ingredients:
1/2 cup tofutti cream cheese
2 tbsp light brown sugar (divided)
1 ½ tbsp sour cream
1 tbsp soy milk
¼ cup graham cracker crumbs
4 tsp caramel topping
Assorted seasonal friuts
Garnish with whipped cream, fresh mint and pomegranate
Directions:
Place cream cheese, 1 tablespoon brown sugar, sour cream and milk in a medium bowl and mix until smooth, gentle fold in whipped topping. Place remaining 1 tablespoon brown sugar and graham cracker crumb in a small bowl stir well. Spoon 2 heaping of cream cheese in a parfait glass them graham cracker, and fresh fruit and top with whipped cream, mint leaves and sprinkle of pomegranate.
