Roasted Cornish Hens
Two cornish hens (1 1/2 pound each)
1/2 stick of butter
1/2 can of chicken stock
1 green pepper
1 red pepper
1 teaspoon of seasoned salt
1 teaspoon of black pepper
1 pack of Goya seasoning

Preheat oven to 350 degrees F on roast. Clean hens well, inside and out under cold running water. Place hens in a roasting pan. Take your peppers and slice to your liking in width. Place peppers in the pan surrounding hens as well as placing the peppers in the body cavity and under the chicken skin and above the breast for added flavoring. Cut your 1/2 of stick of butter in half. Take one half and cut into four squares, place the squares under the skin and between the breast and in the cavity as well. Evenly season the chicken with the seasoned salt, black pepper and Goya seasoning. Take the other half of the butter and place in the roasting pan and then pour chicken stock in the bottom of the pan.

Place the cover on the pan and place in the oven and roast for 1 hour and 30 minutes. Half way through your cooking time spoon the juices over the hens and place the cover back on the chicken.  Take chicken out of roasting pan and place on a platter to serve to your loved one!

Roasted red baby potatoes
1 bag of red baby potatoes
1/3 cup of extra virgin olive oil
2 teaspoons of minced garlic
Coarse kosher salt
Pepper

Pre heat oven to 400 degrees F. Rinse potatoes in cold water and slice into cubes and place in a bowl. Add 1/3 cup of olive oil, salt and pepper to taste and two teaspoons of minced garlic, mix with hands until evenly coated.

Place potatoes on a greased cookie sheet and put in oven to bake for 1 hour, during hour rotate potatoes every 15 minutes to prevent from browning too much on one side or sticking.

Festive salad
2 Romaine hearts
1 bag of Craisins
Sliced honey almonds
Block of sharp cheddar cheese
1 Cucumber
Grape tomatoes

Chop up romaine hearts and add ingredients above and toss. Shred the cheddar cheese to your liking and place on top of salad. Enjoy with your favorite dressing!

Baileys Holiday Mint Delight
750 ml bottle of Baileys Irish Cream
Splash of Hiriam Walker Peppermint Schnapps
Whipped cream
Green sugar crystals
Andes creme de menthe thins

2 ounces of Baileys place in shaker with a splash of the schnapps, add ice. Shake and pour into your favorite holiday glass. Top with whip cream and sugar crystals then garnish with Andes candy.
