Roasted Cornish Hens
Two cornish hens (1 1/2 pound each)
1/2 stick of butter
1/2 can of chicken stock
1 green pepper
1 red pepper
1 teaspoon of seasoned salt
1 teaspoon of black pepper
1 pack of Goya seasoning

Place peppers in the pan surrounding hens as well as placing the peppers in the body cavity and under the chicken skin and above the breast for added flavoring. Cut your 1/2 of stick of butter in half. Take one half and cut into four squares, place the squares under the skin and between the breast and in the cavity as well. Evenly season the chicken with the seasoned salt, black pepper and Goya seasoning. Take the other half of the butter and place in the roasting pan and then pour chicken stock in the bottom of the pan.
