Vegetable pilaf

(WTNH) - Shama Mital prepares vegetable pilaf.

Ingredients:
1 c. long grain rice
4-5 tbsp vegetable oil
3-4 cardamoms black, slightly crushed
2 cinnamon sticks, broken into pieces
1 tsp cumin seeds
2-3 bay leaves
1 tsp. tumeric powder
1 tsp salt
1 c. peas
1 1/2 c. cauliflower
1 potato, peeled and cut into 1" cubes
2 c. water

Wash rice and set aside. Heat oil in pan and add cardamoms and cinnamon. Add cumin, bay leaves, turmeric powder and stir well. Add rice and fry mixture for one minutes. Add salt, peas, cauliflower, potato and water. Mix well, cover pot and bring to a boil. Reduce heat to low and continue cooking until the rice is tender and water is absorbed.
