Sopa de Garbanzo
Otherwise known as chickpea soup, sopa de garbanzo is a hearty and healthy soup. It's also a one-pot meal, which makes it easy and convenient.
5. 15 1/2 ounce cans garbanzo beans
1/2. Medium Spanish onion, diced
1/2. Medium green bell pepper, diced
1. Chorizo sausage, cut into one inch slices
3. Cloves garlic
1/2 tablespoon allspice
1/2 teaspoon freshly ground black pepper
3 teaspoons salt, or to taste
1 teaspoon chicken bouillon
Drain and rinse the garbanzo beans in a colander. Using one of the empty cans, measure 5 cans water into a large soup pot. Add the garbanzo beans and remaining ingredients to the soup pot and simmer until flavors are combined and soup is aromatic, about 30 minutes.
