Orzo with Smoked Turkey

4 cups orzo
1/2 pound smoked turkey, cut into 1/2 inch cubes
6 strips bacon
1 bunch scallions, thinly sliced
1 cup frozen peas, thawed

Cook orzo according to package instructions. Drain and spread on sheet pan to cool. Fry bacon and chop coarsley. When all is cooled, toss together turkey, scallions and peas in large bowl. Prepare dressing.

Buttermilk dressing:

1 1/2 cups mayonnaise
3/4 cup buttermilk
1 1/2 teaspoons garlic, finely minced
Salt , to taste
Pepper, to taste
1 teaspoon paprika
2 teaspoons tabasco sauce

Combine and whisk together all ingredients. Taste carefully and adjust as needed. Mix half the dressing with orzo. Add more to taste for desired consistency.
