(WTNH) - Pumpkin Harvest cookies
Ingredients:
1/4 c. evaporated cane sugar
1 c. flour
1/2 tsp. baking soda
1/2 tsp. pumpkin powder
1/8 tsp. baking powder
1/4 tsp sea salt
1 tsp cinnamon
1/2 tsp. nutmeg
1/8 tsp. ginger
1/8 tsp. cloves
1/4 c. thick oats
1/4 c. quick oats
2 tbsp. flaxseed meal
2 tbsp. pumpkin seeds
1/3 c. raisins
1/4 c. dark brown sugar
1/4 c. canola oil
1/2 c. canned pumpkin
Method:
Cream together oil, brown sugar, and canned pumpkin. Add remainder of ingredients and mix with spoon until thoroughly blended. Drop 1” balls of dough by spoon (or use 1” scoop) onto ungreased cookie sheet. Space 2” apart. Slightly flatten each ball of dough with palm of hand. Bake in a preheated 350 degree oven for 14-16 minutes (middle rack). Cool on cookie sheet.
