Quick Bean Burritos

(WTNH) - Quick Bean Burritos
Makes 4 servings

1 can (15 ounces) low-fat vegetarian refried beans
4 whole-wheat tortillas (preferably low-fat)
1 cup shredded romaine lettuce
2 medium green onions, chopped
1/2 cup Mango Salsa (page XX) or other favorite salsa
1/2 cup Low-Fat Guacamole (page XX)
1 cup Calabacitas (page XX) (optional)

Heat beans in small saucepan or in microwave until warmed through. In a large skillet, heat a tortilla until it is warm and soft, or warm tortillas in the microwave. Spread about 1/2 cup of the beans down the center of the tortilla, then top with 1/4 cup lettuce, 1 tablespoon green onions, 2 tablespoons salsa, 2 tablespoons guacamole, and 1/4 cup Calabacitas, if using. Fold the bottom end toward the center, then roll the tortilla around the filling. Repeat with remaining tortillas or let those dining make their own.
