(WTNH) - Ricotta Gnocchi
Ingredients:
1 pound whole milk ricotta cheese
2 extra large eggs
1 tsp salt
1/2 tsp white pepper
2 c. flour
Method:
In large bowl mix eggs, ricotta, salt and pepper. Slowly stir in flour. Knead dough until smooth. Let sit for 20 minutes.
Cut dough into 8 pieces. Roll each piece into a snake and cut into 1/2 inch pieces. Boil until gnocchi float.
Serve with your favorite pasta sauce.
