(WTNH) - Neil Fuentes prepares short ribs.
Short Ribs (For 4 people)
8 short Ribs
2 medium size tomatoes
1 medium onion
4 cloves of garlic
1 medium bell pepper
4 tbsp of adobo
8 cups of red wine
2 cups of beef broth
Dust the short ribs with the adobo. In a large soup pot, add a little olive oil, add the short ribs and brown on every side. In the meantime while the ribs are browning, in a blender, add the tomatoes, onion, bell pepper, and garlic; also add some of the wine and some of the beef broth. Blend all these ingredient very well.
Add this sauce to the ribs, add the rest of the the red wine and the beef broth. Bring it to a boil. Then place in a 300 degree oven from 3 to 4 hours. Half way through, make sure you taste the sauce and add a little salt if necessary.
Serve with your favorite starch such as risotto, polenta, mashed potato, etc.
