Shrimp with Pineapple Salsa

(WTNH) - Shrimp with pineapple salsa over mixed greens.

Ingredients:
1 bag of mixed greens
2 tbsp olive oil
1 lb shrimp, peeled and cleaned
2 tsp garlic powder
1/4 c. teriyaki sauce
Juice of 1 lemon

Pineapple Salsa
2 tbsp olive oil
1 red pepper, chopped
1 orange pepper, chopped
1/2 c. red onion, chopped
2 c. pineapple chunks
1 tbsp cilantro, chopped
2 tbsp lime juice

Prepare salsa, set aside. Plate greens on large platter, set aside. In small bowl, add shrimp, garlic powder and teriyaki and lemon juice over shrimp to marinade. In a large skillet, heat olive oil on high heat. Saute shrimp for about 3-5 minutes until it turns pink. Spoon shrimp over salad. Spoon pineapple salsa over top. Toss gently to coat.

To prepare salsa, heat oil in skillet and saute peppers and onions for about 5 minutes until tender. Add pineapple and remaining ingredients. Heat through about two more minutes. Set aside.
