(WTNH) - Spicy HOLLYday Tri-Color Pasta with Fresh Campari Tomato Sauce
Ingredients:
2 tablespoons extra virgin olive oil
2 packages mini Campari tomatoes, diced
1/2 cup red and green peppers, julienned (frozen ones work really well for this dish)
4 small hot Italian sausage links, removed from casing and either crumbled or sliced thinly (you can use hot pepperoni as an option)
1 teaspoon red pepper flakes
1 small-sized sweet onion, diced
2 cloves garlic, minced
1 medium-sized fresh mozzarella in package
Parmesan or Pecorino Romano cheese
Method:
In a frying pan (over medium heat), add olive oil, garlic and onion. Cook until translucent, then add the sausage and cook until browned evenly. Add your campari tomatoes, peppers and some more olive oil. You could add artichoke hearts at this point if you had them, too. Season everything in the pan very well with salt, pepper, dried parsley, fresh basil, and stir. Allow everything to simmer together on the pot.
Boil a large saucepan full of water and add 1 box tri-color farfalle pasta. After about 10 minutes of cooking the pasta, add it to the sauce and cook for a few more minutes. Add more olive oil, red pepper, parmesan cheese and slices of fresh mozzarella, which should melt in the pan with the rest of the ingredients. Sprinkle the top with lots of fresh basil and serve nice and hot!
