(WTNH) - My City Kitchen prepares spicy shrimp with a tropical fruit salad.
Spicy Shrimp Ingredients:
1 1/2lb of raw jumbo shrimp (peeled and deveined)
3 tbsp extra virgin olive oil
Spicy rub
1/2 cup ground allspice berries
1/2 cup packed brown sugar
4 garlic cloves
1 Scotch bonnet pepper
2 tablespoons thyme leaves
1 bunch scallion
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Salt and pepper to taste
Directions:
Place all the spicy rub ingredients in a food processor and blend until smooth. Place shrimp in a large bowl, add the spicy rub, mix and marinate in the refrigerator for a least 1 hour. Heat the oil in a large sauté pan over medium-high heat. Add Shrimp and cook, stirring occasionally for 3-4 minutes, until it's no longer pink. Remove from the heat and serve on a bed of Tropical fruit salad with a passion fruit vinaigrette.
Tropical Fruit Salad Ingredients:
1 small papaya
1 large ripe mango
½ pineapple
2 oranges
Directions:
Peel and halve the papaya and remove the seeds. Cut off top and bottom of the pineapple and remove the skin. Cut in half lengthwise and remove the core. Cut the mango twice lengthwise close to the seed.
Cut the flesh of the fruits into small chunks or slices, place into a large bowl with organic salad. Toss with Passion fruit vinaigrette. Garnish with mint and cilantro.
Passion fruit vinaigrette:
5 oz passion fruit juice
4 oz olive oil
½ tbsp lemon juice
½ tsp white wine vinegar
½ tsp dry mustard
Salt and pepper to taste
Combine the juice, vinegar and mustard. Whisk in the oil gradually. Flavor with salt and pepper.
