Serves 6-8

14 plum tomatoes
1 pre-made pie crust
2 garlic cloves, minced
Handful of basil, chopped
1 cup ricotta cheese
½ cup shredded mozzarella
½ tsp salt
½ tsp pepper
Preheat oven to 350Ë.
Press pie crust into a pie pan and bake for 10-15 minutes, until lightly golden. Remove and let cool slightly.
Roughly chop tomatoes and squeeze through a colander to remove most of the liquid. Combine tomatoes with garlic, basil, mozzarella, salt and pepper in a bowl. Spread ricotta over bottom of pie crust. Top ricotta with tomato mixture, then return to the oven to bake for 35-45 minutes, or until crust is golden and tomatoes are beginning to caramelize.
Remove from oven and let cool for 10 minutes before serving.
