Wooster Square Grill Chili

Wooster Square Grill
Chili

 

1lb chopped/ground beef (I suggest 90-10)
1 lrg onion minced
2 cloves of garlic minced
3 – 5 tbs olive oil
1 cup tomato sauce
6oz tomato paste
6 – 8oz Abita Turbo Dog
½ tsp ground cumin seed
½ tsp oregano
¼ tsp crushed red pepper
1 bay leaf
2 tbs chili powder
¼ cup basil
1 ½ tsp salt
1 can dark red kidney beans
1 can pink kidney beans

Sauté beef, onion & garlic slowly in oil. Add tomato sauce, paste & seasonings. Continue simmering over low heat for 10 minutes. Add the Abita & beans, cover and simmer for an hour (or more).

Add beef stock to alter consistency as needed.

Add a touch of hot sauce to add kick.

**Remove Bay Leaf**

Serve with Mexican Crema or Sour Cream and Cheddar.
