(WTNH) -- Christina Chang-Bryant is in the kitchen making a peach blueberry cobbler.
Peach Blueberry Cobbler
Ingredients:
1 cup flour all purpose
1/2 cup sugar
2 teaspoons baking powder
4 ounces butter (1/2 to mix with flour, 1/2 to melt in pan)
1 cup milk
6 peaches peeled and sliced
1/2 cup blueberries (optional)
1/4 cup sugar + 1 teaspoon cinnamon (mix)
Method of preparation:
1. Preheat oven to 350 degrees
2. In a large bowl combine flour with baking powder and sugar. Cut 2 ounces (1/2 stck) of butter into small pieces and add to flour mixture. Cut in until it looks like coarse crumbs. Add milk, stir until smooth.
3. Place remaining butter into a 9 inch baking dish. Place it into hot oven for 5 minutes until the butter melts. Swirl the butter over the bottom and sides. Pour the batter into the hot dish. Arrange the peaches on top of batter. Add blueberries (optional). Sprinkle the cinnamon sugar on top of the batter.
4. Back at 350 degrees for 45 minutes. Serve warm with ice cream or whipped cream.
