(WTNH) - Kashia Cave whips up pulled chicken sandwiches.
Pulled Chicken Sandwiches (Recipe Courtesy Big Y)
1 cup Big Y ketchup
2 tbsp Big Y brown Sugar
2 tbsp Big Y cider vinegar
2 tsp Big Y chili powder
1 tsp Big Y garlic powder of 2 cloves of fresh garlic chopped
1 tsp dry mustard
2 tsp onion powder
1 tsp Big Y paprika
1tsp ground cumin
¼ tsp ground allspice
2 cups cooked rotisserie chicken, shredded
8 leaves of lettuce
8 Big Y sandwich rolls
In a small saucepan over medium heat, combine all the ingredients except the chicken, lettuce and rolls. Bring to a simmer. Cook for 3 minutes or until slightly thick, stirring occasionally.
Add chicken and gently stir to combine. Cook for 2 minutes or until chicken is thoroughly heated. Place a lettuce on the bottom half of each bun. Spoon chicken mixture on lettuce and top each with other half of bun.
Makes 8 (1-sandwich) serving.
