Her tips on maintaining a healthy weight:
Tabouli with Tart Cherries and Cucumber
(Serves 4)
1 cup bulgur, soaked and covered in 1/2 cup piping hot water until water is fully absorbed
2 tablespoons cup tart cherries
1/2 cucumber, peeled, cored, and finely diced
1/2 bunch flat leaf parsley, finely chopped
Freshly ground sea salt and pepper
Juice of 1 lemon
1 tablespoon extra virgin cold press olive oil
In a bowl, mix together the bulgur, goji berries, cucumber, parsley, sea salt and pepper, lemon juice, and oil.
SERVING TIP: Serve with a side of creamy Greek yogurt, tender oak leaf lettuce, and some colorful olives.
Shrimp Dumplings with Stir-fried Watercress
Shrimp Dumplings with Watercress
(makes 48, serves 6)
1 pound peeled and deveined shrimp, minced
1 ounce ginger, peeled and grated
1 scallion, minced
1 tablespoon soy sauce
1 teaspoon sesame oil
black pepper to taste
48 dumpling wrappers
1 tablespoon grapeseed oil
1 large garlic clove, minced
2 bunches watercress, stems trimmed
In a bowl, mix together the shrimp, ginger, scallion, soy sauce, sesame oil, and pepper until well combined.
Take a wrapper and put a heaping teaspoon of shrimp filling in the center. Wet the inside edge of the wrapper and fold into a half moon. Wet the two points and pinch them together. Repeat until you have 48 dumplings
Bring a large pot of water to a boil. Boil the dumplings for 3 minutes and transfer in batches to individual bowls.
Meanwhile, heat the oil in a skillet and stir-fry the garlic until fragrant, about 30 seconds. Add the watercress and and continue to stir-fry until just wilted. Add to the dumplings.
Spiced Hot Chocolate
(Serves 1)
2 teaspoons unsweetened dark cocoa
1-1/4 cup water
4 cardamom pods
1 small cinnamon stick
In a small pot over medium heat add the cocoa powder, water, cardamom, and cinnamon. Bring to a gentle boil for 2 minutes and serve.
Japanese Matcha Tea
(serves 1)
1/2 teaspoon matcha green tea
1 cup piping hot water
In a tea cup add the matcha and small amount of hot water. Whisk with bamboo brush, then add the remaining water, stir and serve.
