The Latino Expo kicks off

The Latino Expo kicks off in the kitchen with a spicy dish. 
 
Neil Fuentes, the Singing Chef, will be a guest at the upcoming 12th Annual Latino Expo, on Sat. and Sun., May 5 - 6, 2012. Join Neil both days at the News 8 booth where he will be doing cooking demos.
 
The Latino Expo will be held in East Haven. This is the first time in the 12 years that it will not be held in Hartford. The Latino Expo is a festival of Hispanic culture, business and entertainment. Families and friends attend to find out about starting a business, buying a home, going to college, or getting a job. There will be live music and dancing both days.
 
The 12th Annual Latino Expo, is this weekend from noon to 5 p.m. and admission is free!

Braised Beef
 
Ingredients:
1 lb of beef (Beef for stew is great)
6 Garlic Cloves
1 can of tomatoes (Diced, whole, It doesn't really matter)
1 Red Bell Pepper
1 small onion
1/2 cup of water
1 0.75lt Bottle of red wine
1 teaspoon of cumin
1 teaspoon of paprika
Salt and pepper
1/2 cup of Olive oil
 
Directions:
  1. Make sure you dry the meat with a paper towel. Season with Salt and Pepper.
  2. Heat up a large pot to medium high, add olive oil, once starts to smoke a little place the beef and let it cook without moving for 3 minutes to create a nice crust and seal the juices. While that is happening, place the rest of the ingredients (Except the wine) in a blender or food processor. Move the beef to make sure you sealed the beef all around. Once the beef has been browned, add the mixture to the pot and the entire bottle of wine. At this point re-season to make sure you have enough salt to your own taste.
  3. Bring to a boil. Once it boils, take of the stove and place (covered) in a 350 oven for 2 hours.
  4. Serve with your favorite starch.
