Beautiful bok choy

(WTNH) -- Bok choy is a leafy green vegetable that is very low in calories, high in fiber and contains plenty of vitamins.

Bok choy is an Asian vegetable, very similar to pak choi or Chinese cabbage.

Nutritionist and "clean-eating coach" Wendy Battles shares one of her favorite bok choy recipes.

Toasted Sesame Bok Choy

Ingredients:

  • 4-6 heads of baby bok choy
  • 2 tsp. toasted sesame oil
  • 1 tbsp. tamari (wheat-free soy sauce)
  • 1 tbsp. rice wine vinegar
  • 1 tbsp. sesame seeds, toasted
  • 1/2 tsp. chili flakes or crushed red pepper (optional)

Directions:
1. Chop leaves and stems of bok choy into bite-sized pieces.
2. Heat oil in a wok or sauté pan.
3. Sauté bok choy for approximately three minutes or until tender and slightly wilted.
4. Add remaining ingredients to pan.
