Season sea bass with salt and pepper. Pan sear the fish and then simmer with one garlic clove, 2 oz. roasted grape tomatoes, 1/2 oz. capers, 2 oz. asparagus, 4 oz. of mussels, 2 oz. of white wine, half of a fresh squeezed lemon, 1 oz. of butter, 5 oz. fish stock, and 1 tsp. of olive oil.
