Cast iron cookware has been used for over two thousand years and is valued for its durability, its ability to retain heat, and to maintain an evenly cooked item especially over uneven heat; thus improving the quality of the food. Cast iron’s ability to withstand and maintain very high cooking temperatures makes it a common choice for searing to lock in the juices. 

Seasoning a cast iron pan is imperative; a process by which a layer of fat or vegetable oil is applied and cooked onto cast iron pan. A proper cast iron seasoning protects the cookware from rusting, provides a non-stick surface for cooking, prevents food from interacting with the iron of the pan and enhances the flavor of the meat.
