8 Minute Meal: Carrot and ginger soup (Part 2)

We are prepping today’s 8 minute meal in the kitchen with clean eating health coach Nikki Gallias.

If you’re looking to eat healthier and eat on a budget this year, this soup is for you!

Below is the recipe for carrot and ginger soup:


  •  1 container mirepoix
  •  2 garlic cloves
  •  1 tablespoon of avocado oil
  •  3-4 cups of chicken broth
  •  ¾ teaspoon black pepper and salt
  •  6-8 large carrots
  •  1 tablespoon of coconut milk or cream
  •  ¼ teaspoon of fresh lemon
  •  ½ teaspoon of freshly grind ginger


Sauté mirepoix in avocado oil for about 5 min, until golden brown. Add the freshly
chopped garlic, ginger and lemon and sauté for 5- 10 minutes. Add the chopped carrots and sauté, stirring constantly for 2-3 minutes.

Add the chicken broth and let simmer for 20-30 minutes. With your stick blender puree the carrots until a nice smooth consistency. Add the coconut cream/ milk and return to the stove and stir on a low heat.

Serve warm and add salt, pepper or pepper flakes if you want an additional flavor, garnish with some grilled asparagus or approved bacon crumbled on top.
