Healthy Living Expert Margaret Marshall makes caramelized onions and goat cheese flat breads for an 8 Minute Meal.
One package of flatbreads
Two large sweet onions
¼ cup of brown sugar
Goat cheese (Or your favorite cheese, blue, gorgonzola, feta)
Buy a package of your favorite flat breads
Place four flatbreads in one layer on one or two cookie sheets in a 300 degree oven until crispy, about 4 to 5 minutes
Make the caramelized onions:
Slice 2 large sweet onions into slices
Place in sauce pan with about 1/4 cup brown sugar
Simmer and stir until onions are translucent and brown sugar is dissolved.
Spoon onion mixture on top of crispy flatbreads
Place crumbled goat cheese on top of onions
Top with fresh basil
Put cookie sheets with flatbreads back into oven until cheese melts.
Top with balsamic glaze
