Shoreline is a favorite in Guilford — for herbivores and omnivores alike. They take pride in being a haven for vegetarians and vegans. You can go there for a vegan breakfast scramble or a dry aged steak; this family-owned diner has been doing it all for decades.
“We’ve been doing vegan food since 1996 so we were one of the first in the area to go in that direction,” said owner Nico Anthis. “We still have a signifcant following of people who are vegan and vegetarian.” Nico’s father opened the diner after moving here from Greece, where he was a police officer. Nico says his father came here to “try his luck” as an entrepreneur.
“He has left my sister and I this business,” Nico said, “and we are trying to make him proud by working hard and offering things that you wouldn’t expect in a diner typically.”
It’s not just unusual items, it’s the preparation too, like sous vide chicken and salmon.
“It’s not just what you’re buying, it’s how you’re treating it,” said Anthis, “and we’re combining very scientific methods with very classic methods and I don’t think there’s other diners who are doing that at this moment.”
