Holistic Health Coach April Godfrey makes healthy tacos with cauliflower and crunchy chickpeas for meatless Monday.
Ingredients:
1 head of roasted cauliflower
1 spiralized or grated sweet potato
1 small white onion finely chopped
I can chic peas drained and well rinsed
2-3 Tbsp olive oil
Salt to taste
Pepper to taste
Pinch of cayenne pepper, or more to taste
Roasted chic peas
Cashew creamy avocado and cilantro dressing:
1/2 cup of pre-soaked well rinsed cashews
1/2 cup filtered water
1/2 avocado
1 Clove garlic
1/2 tsp salt
1/2 cup fresh cilantro
Juice of one lime
Soft corn tortillas
Directions:
-in a skillet over medium heat, add 1-2 Tbsp olive oil and chopped onion, sauté for 3-5 minutes, add sweet potato and continue to sauté an additional 5-6 minutes. (Add more olive oil if needed)
– add roasted cauliflower and chic peas along with cayenne pepper, salt and pepper.
-set on low and stir occasionally. (or cover and turn burner off, we are almost ready to fill our tacos!)
Dressing directions:
Put soaked cashews, water, avocado, lime juice, garlic, salt and cilantro into a food processor and blend until smooth and creamy.
-warm soft corn tortillas according to directions.
-fill tortilla with cauliflower mixture, drizzle with super delicious avocado dressing and top with crispy chic peas!
