8 Minute Meals: chunky banana nut muffins

Holistic Health Coach April Godfrey makes banana nut muffins for a quick and delicious breakfast or snack.

Ingredients:

> 1 1/2 cup gluten free flour
> 1 tsp baking soda
> 1 tsp baking powder
> 1/2 tsp sea salt
> 3 Tbsp chia seeds mixed with 6 Tbsp water
> 1 very ripe banana 
> 1 stick vegan butter
> 1 cup sugar
> 2 tsp vanilla extract
> 1 cap apple cider vinegar
> 2/3 cup coconut milk
> 1/3 cup vegan chocolate chips
> 1/3 cup chopped walnuts

Directions: 

> ~Pre-heat oven to 350 degrees.
> ~Prepare your favourite muffin tin.
> ~Mix chia seeds and water, set to the side.
> ~Mix the flour, baking soda, baking powder and salt together in a mixing bowl.
> ~Melt the butter and add sugar, mix until well blended.
> ~Mix banana, vanilla, apple cider vinegar and coconut milk into the butter and sugar, mix well. Add chia seed mixture.
> ~Mix the wet ingredients into the dry ingredients. Mix very well. Add chocolate chips and walnuts. Mix.
> ~Fill your muffin tins 3/4 full and bake for approx. 25 minutes. Check for done-ness.
> ~Cool for a few minutes then dive in!
> ~Enjoy
